英文摘要The study reports on seven kinds of flavonoids which act as antioxidants to remove free radicals in atmosphere of simulation environment. Scavenging capacity and half-inhibition concentration (IC50) have been monitored by cyclic voltammetry, and confirmed by UV-vis. spectroscopy. Results indicated that the studied seven kinds of flavonoids had strong scavenging ability of the radicals. The removal ability order turned out to be: quercetin (IC50, 0.039) > hypericin (IC50, 0.040) > catechin (IC50, 0.048) > luteolin (IC50, 0.049) > scutellarein (IC50, 0.065) > baicalein (IC50, 0.078) > genistein (IC50, 0.130), which was closely related to their structures. The degree of hydroxylation, the number and location of hydroxyl on the ring, the double bond of the formatting, degree of unsaturation and spatial structure of A,B,C ring are all important influencing factors on antioxidant activity.
