英文摘要目的:了解我国公众对食品添加剂的认知现状及影响因素,为食品添加剂风险交流提供策略支持.方法:采用随机抽样方法,对全国7省份城市和农村14个调查点进行自填式问卷调查.结果:我国公众对于食品添加剂有较高的风险认知,72.5%的受访者存在概念误区,将三聚氰胺等违法添加物视为食品添加剂.公众对食品添加剂风险的高感知,起到主导作用的是政府、企业在食品安全相关工作上的履职信任而非概念知识的缺乏.结论:要促进食品添加剂的科学认知,应以政府和企业信任培育为交流工作的核心策略目标,而在信任培育上,提升政府和企业的关心信任比能力信任更有效.; Purpose: This study investigated the public' s risk perception on food additives and the influence factors, aiming to support the government risk communication strategies. The method: the public from fourteen survey points of seven provinces of China was randomly enrolled into the survey and filled the self-reported questionnaire. Results: Participants perceived food additives high risk issue. About 72.5% of participants misunderstood the concept of food additives, perceiving illegal additives as legal food additives. Despite of concept knowledge, social trust on government and food industry significantly affected public's risk perception. Conclusion: To help lay consumers perceive food additives more scientific and rational, the key strategy should be trust approach not information campaigns. Moreover, increasing public's care trust, not competency trust, on government and food industry might be more effective. ?, 2015, Chinese Institute of Food Science and Technology.
