英文摘要	近年来，动物源性食品安全已成为急需解决的全球性问题。在我国普遍存在着过于追求肉类产量而忽视产品质量的现象，尤其是一些不法生产者不惜损害消费者的健康来获得不当利益，导致我国肉品的安全问题日益严重。在建立健全畜禽产品质量安全管理体系的同时，还需要先进的快速检测手段来加强肉类食品的质量检测。本论文以猪肉为代表，研究了肉品卫生的检测检验方法，包括肉品新鲜度和健康度的检验，并建立了病害肉快速检测仪器和方法。本论文共五章。第一章，文献综述，主要介绍我国肉品安全概况、现有的检验方法，以及酶活性的测定方法。第二章，肉品卫生的常规检验方法，对pH值法、硫酸铜蛋白沉淀法、过氧化物酶的联苯胺测定法以及细菌内毒素呈色...; The food safety of animal meat has been become a global problem recently.
