英文摘要	清真拉面经营不仅是一项经济活动,也是一项文化的传播互动与交流活动。清真拉面经营不仅具有经济功能,还具有一定的社会文化功能。在其经营过程中,清真文化和民族不仅是经营者的身份象征,也是其经营的文化资本。清真文化和民族认同在清真拉面经济的经营和管理中发挥着重要的作用。在清真拉面的经营和发展过程中,形成了以索缘、地缘、友缘和信缘认同为基础的文化和社会经济关系网络,这对外来的穆斯林经营群体在陌居的城市中生存和发展提供了有利的社会资本,同时不断激烈的竞争也冲击和影响着经营拉面群体的认同与互动。; Muslim stretched noodles business is not only a kind of economical activity,also a way of culture spreading and communication,so it has the functions of economy and social culture.During the running process,Muslim culture and nationality are the identity symbol and the cultural capital as well.Muslim culture and nationality identification play important role in the process of stretched noodles business running,and formed a economical relative network rooted on the identification of blood relationship,field relationship,friendship and belief relationship that provide living and developing social capital for Muslim managing groups from other cities.At the same time,increasingly sharp competition has great impact upon identification and interaction of the group.
