中文摘要为了利用蛋白酶水解低值鱼或鱼加工下脚料生产水解鱼蛋白质,以鲢鱼蛋白质为原料对比研究了原料前处理、底物浓度、酶解时间、产物抑制浓度等对碱性蛋白酶和复合蛋白酶水解鱼蛋白质的影响,并研究了用2种蛋白酶分阶段水解鱼蛋白质的工艺.结果表明,碱性蛋白酶水解鲢鱼蛋白质在pH8.0时的适宜条件为:温度45℃,酶解时间20 min,蛋白质质量分数低于6%,产物氨基态氮质量浓度低于2.55 g/L;复合蛋白酶在pH6.5时的最适水解条件为:温度50℃,酶解时间20 min,蛋白质质量分数小于6%,产物氨基态氮质量浓度小于2.25 g/L;用2种蛋白酶分段水解鲢鱼蛋白质可大大提高水解产物的氨基态氮含量,增加水解产物的得率.; Conditions of enzymolysis(such as pre-treatment,temperature,substrate concentrations,hydrolysis time and product concentration) of silver carp protein by alcalase and multi-protease were studied.The results showed that the optimum hydrolysis condition of alcalase for silver carp protein was pH 8.0,45 ℃,20 min,protein concentration below 6 %,product amino nitrogen concentration below 2.55 g/L;the optimum hydrolysis condition of multi-protease was pH 6.5,50 ℃,20 min,protein concentration less than 6 %,product amino nitrogen concentration less than 2.25 g/L;hydrolysis with two proteases in two steps could greatly enhance the content of the amino nitrogen and increase the recovery of ammoniacal nitrogen.These results were important for the further utilization of low value fish protein with enzymatic methods.; 【作者单位】集美大学生物工程学院; 集美大学生物工程学院 福建厦门361021; 福建厦门361021;【作者英文名】YANG Yuan-fan,NI Hui,CHEN Shen-ru,ZOU Qing-mei,CAI Hui-nong,HUANG Zhi-yong(School of Biotechnology Engineering,Jimei University,Xiamen 361021,China)
